As demand for processed dairy products continues to rise globally, the big 5 cheese exporters continue to grow their markets, minus Australia. Continued drought in Australia has caused culling to continue, and the overall dairy herd size has continued to shrink. The USDA projects that demand for protein, in the form of meat and dairy products, will continue to rise in 2019 and 2020. Demand from Asia continues to drive much of this growth. Cheese exports have doubled in the past 20 years as incomes have risen in developing nations, and as tastes and preferences have shifted.
